Makes 6 servings. Preparation time:1 hour 30 minutes pluse 8 hours' marinating. Cooking time:3 to 3 hours and 30 minutes - 4 cloves garlic, peeled and crushed

- 1/4 teaspoon turmeric(available at the store)
- 1 teasspoon ground rose petals(available at the store)
- 1/2 teaspoon ground cardamom(available at the store)
- 1/2 teaspoon ground cumin(available at the store)
- 1/2 teaspoon ground cinnamon(available at the store)
- 1 teaspoon ground saffron(available at the store), dissolved in 2 tablespoons hot water
- 1 and 1/2 cups low-fat yogurt(available at the store)
- 2 tablespoons chopped candied orange peel
- 1 pound lean boned leg of lamb or chicken, cut into 2-inch cubes
- 3 cups long-grain basmati rice(available at the store)
- 1/2 cup olive oil(available at the store)
- 1 small onion, peeled and thinly sliced
- 1 egg, beaten
